Coco Choco lollies.......Chocolate fantasy

These lollies are great for the children to help out with.You can decorate them in lots of way with sprinklers,more melted chocolate or chopped dry fruits.A great gift idea for our little ones.Try making them with white chocolate if you prefer.Let your imagination run wild.......

INGREDIENTS                                                                                                          

SERVES :8 pieces

1 cup desiccated coconut (finely powdered dried coconut)
¾ cup milkmaid cold
1/2 cup dark chocolate

METHOD

Mix desiccated coconut and milkmaid to form a smooth binding. Make small balls with it and prick toothpick in it and refrigerate for 1 hour. Melt chocolate in double boiler or microwave. Take out coconut balls from fridge and dip it in melted chocolate and keep it in standing form in bowl and again refrigerate for 30 minutes, to set chocolate.

YOU CAN ADD POWDERED ALMONDS ALSO. IF YOU FIND MIXTURE VERY STICKY ADD MORE COCONUT, GENERALLY AFTER FREEZING IT BECOMES NON-STICKY.

IF YOU DON'T HAVE MILKMAID YOU CAN ADD POWDERED SUGAR AND COLD MILK.

1. In a bowl, take 1 cup coconut.













3. Add 3/4 cup milkmaid.













4. Mix well.


5. Make small balls and prick toothpick on it and keep in fridge for 1 hour.













6. Melt chocolate in microwave add 1 tsp melted butter and dip the balls in it.













7. Make them stand in bowl and keep it in fridge for 30 minutes. Take out dust icing sugar and drizzle chocolate syrup and ENJOY!

Choco balls-balls of delight and ecstasy

Easy and quick dessert for kids.I saw this recipe in cooking show and without a moment I have writtn down.I tried and my daughters loved it.The blend of coco,chocolate and coconut together creates magic....Best chocolate treat for you kids who are preparing for exams....infact a mothers love to recharge the batteries of their children......smalldeeds of mother can create wonders....try this and post your valuable comments...

 INGREDIENTS                                           
12- 15 Marie Biscuits    
5-8 chocolate biscuit (optional)
2-3 tbsp cocoa powder
½ cup condensed milk
½ cup roughly chopped almonds
2 tbsp dessicated coconut powder

METHOD 

Grind all the biscuits in a jar to make a smooth powder. Transfer it in a bowl, add condensed milk, 2 tbsp chopped almonds, you can add walnuts and cashew nuts. Make a dough. Spread coconut powder and remaining chopped almonds in different plates. Roll the balls over coconut powder and some over almonds. Your balls are ready.
YOU CAN ADD DRY FRUITS OF YOUR CHOICE OR ACCORDING TO YOUR CHILD'S TASTE.

1. Take around 15 marie biscuits and 8-10 chocolate biscuits.





















2. Grind it in a jar.





















3.  Blend it to form a smooth powder. 





















4. Transfer in a jar and add condensed milk.





















5. Add 2 tbsp cocoa powder





















6. Add roughly chopped almonds or any nut of your choice and make a dough





















7. In one plate, spread roughly chopped almonds and roll balls over it.





















8. In other plate, spread coconut powder and roll chocolate balls over it.





















9. Decorate and serve.

MULTIGRAIN ATTA LADOO-Eat your way to good marks

"Don't just feed.....Nourish your child".....With exams round the corner,its time for our kids to gear up for some learning and creative thinking.Right nutrition plays a vital role in brain and memory development.Brain is the most important organ of the body after the heart;and rightly said,it is the powerhouse of the body.The brain goes through an additional stress during exams.Therefore it is essential to ensure that children are eating right during exams
Here I am presenting multigrain atta ladoo to boost brain function of our children.Happy cooking...Anamika

INGREDIENTS                                                                         
1 cup multi-grain atta (multi-grain whole wheat flour)
1 1/2 cup powdered sugar 
1/2 cup flax seeds
1/2 cup sesame seeds
1/2 cup oats
1/4 cup coconut powder (optional)
1/4 cup roasted peanuts
1/4 cup almonds
1/4 cup cashew nuts
1/2 cup ghee (clarified butter)
1 tsp cardamom powder

METHODSeparately dry roast flax-seeds, sesame seeds, oats. Let it come down to room temperature and grind to make smooth and fine powder.
In a heavy bottomed pan, first dry roast whole wheat flour (multi-grain atta) on low flame for 2-3 minutes then add ghee and roast more till it is fragrant and brown.

Once it is fragrant add powdered flax seeds, powdered sesame seeds, powdered oats and powdered peanuts. Roast for another 2-3 minutes. Add roughly chopped almonds and cashews.

Remove from fire and add powdered sugar. Mix well.

Let it come to room temperature.

Make ladoos of desired size.

NOTES: IT WAS AN EXPERIMENT SO I ADDED SEEDS AND GRAINS ACCORDING TO AVAILABILITY. EVEN IF YOU OMIT ANY INGREDIENT WILL NOT EFFECT THE TASTE AND TEXTURE. BUT ADDING ATTA (WHOLE WHEAT FLOUR) IS MANDATORY.

SO SWEET JAGGERY: GUD KA DOSA

Gud ka dosa is an instant sweetened dosa like dish that can be prepared quickly . So that makes it a perfect recipe to prepare when you are in a hurry.It also makes a decent breakfast, different from the usual things we have. When I was a kid, My mum used to make it for me whenever I felt hungry and did not want to have those regular meals.So, I am sure the kids are going to love it. You too won’t mind preparing it for them as it takes very less time and can be prepared with simple ingredients that are easily available in a kitchen.                     

INGREDIENTS:
1 Cup wheat flour
1/4 Cup rice flour
1/2 Cup jaggery
2 Tablespoon dessicated coconut
1/4 Teaspoon elaichi powder
Ghee for roasting

METHOD:
Heat 1 cup water,dissolve jaggery in it.When it dissolves completely ,strain the solution.On cooling add rest of the ingredients and make a batter having thick consistency.On nonstick pan pour a ladleful of batter.Spread it in circular manner.Spread some ghee on the edges.Flip from both the sides...roast till crunchy....
Note: Temperature is the key factor in the above recipe.If the pan is too hot or too cold,the batter may contract....so keep the pan on medium flame always...

SO SWEET JAGGERY-GUD KE CHURMA LADOO

Let's begin a new post of this year with some special.As we all know winter is the best season to  binge on seasonal delicacies that are not only finger licking good ,but are also packed with multiple benefits that help us to stay warm and strengthens our immunity.

Jaggery commonly known as "GUD' in hindi is a completely unrefined sugar made from sugar cane juice that is reduced (cooked down) and set into blocks.It has a wonderful ,rich flavor,somewhere between molasses and caramel depending on the quality and season.

INGREDIENTS:
1 cup coarse wheat flour
1 cup bajra flour
1and 1/2 cup grated jaggery
1/2 teaspoon green cardamom seeds crushed
8-10 almonds chopped
1/2 cup clarified butter  (GHEE)
1/4 cup cashews chopped
1 cup milk

METHOD :
 Mix both the flours.Add 1/4 cup ghee,Knead into a stiff dough with the help of milk.Keep covered for 10-15 minutes..Now roll thick paranthas out of dough.Note; Roast paranthas on low flame so that they can get crisp from inside.When cooled crush these parantas into small bits,add grated jaggery,chopped nuts,cardamom powder and rest of the ghee.Make small ball of this mixture.....and churma ladoos are ready to serve.You can store these
ladoos in air tight container.

Winter Wonder- Haldi ki sabji

' Haldi ki sabji ' is a traditional recipe of Rajasthan served in special occasions like marriages and parties.It is special delicacy in Rajasthan during winters.
'Kachi haldi' is yellow in colour and looks like ginger ,Haldi ( turmeric) is hot in tendency and is used to cure cold and joint pains that take place during winters.
Turmeric is known as"QUEEN OF SPICES".
As turmeric is quite dry and hot in nature so a good amount of ghee and curd should be added to balance the hot and dry nature of turmeric.
It is said that when combined with cauliflower it has shown to prevent prostate cancer and stop the growth of existing prostate cancer.
In my JODHPUR  'Haldi ki sabji' is the feast of the day.......Peeling and preparation stains the hands yellow....making the near and dear ones know that a delight is being prepared...yum so lets enjoy the recipe.Do share your comments for this 'Royal Rajasthani Cuisine',
INGREDIENTS:
Raw turmeric : 250 gms                                
Cauliflower : 1 small
Green peas : 1 cup
Green chilli -1-2
Ginger ; 1 small piece
Curd :2 cup
hing ; a pinch
coriander powder ; 2 teaspoon
salt ; according to taste
red chilly powder ; 2 teaspoon
coriander leaves chopped ; 1 tablespoon
cashews ; 1 tablespoon
Ghee : 1 cup
jeera :1 teaspoon
METHOD
1) Wash turmeric rhizomes ,wipe ,peel and grate them in a bowl.
2) Peel and wash the ginger and cut into big pieces.Grind ginger and green chillies.
3) Cut cauliflower into small florets.
4 Whisk the curd and add all the spices in it.
 5) Heat ghee in a pan and roast the grated turmeric till it changes the colout.Keep aside.
6) Fry the peas and cauliflower in the same ghee and keep aside.
7) roast cashews and keep aside.
8) In the same ghee add hing,jeera ,ginger chilli paste then turmeric ,caulifloer and peas ,Add salt .Cover it for 5 min. Now add whisked curd with spices.Cook till ghee leaves.
9) Mix cashews and coriander leaves and leave it covered for 10 -15 min.
10) Serve with tandoori roti or simple tawa roti. but traditionally it is served with bajra sogra ( thick bajra roti ) and rajasthani kadi.
