SO SWEET JAGGERY: GUD KA DOSA

Gud ka dosa is an instant sweetened dosa like dish that can be prepared quickly . So that makes it a perfect recipe to prepare when you are in a hurry.It also makes a decent breakfast, different from the usual things we have. When I was a kid, My mum used to make it for me whenever I felt hungry and did not want to have those regular meals.So, I am sure the kids are going to love it. You too won’t mind preparing it for them as it takes very less time and can be prepared with simple ingredients that are easily available in a kitchen.                     

INGREDIENTS:
1 Cup wheat flour
1/4 Cup rice flour
1/2 Cup jaggery
2 Tablespoon dessicated coconut
1/4 Teaspoon elaichi powder
Ghee for roasting

METHOD:
Heat 1 cup water,dissolve jaggery in it.When it dissolves completely ,strain the solution.On cooling add rest of the ingredients and make a batter having thick consistency.On nonstick pan pour a ladleful of batter.Spread it in circular manner.Spread some ghee on the edges.Flip from both the sides...roast till crunchy....
Note: Temperature is the key factor in the above recipe.If the pan is too hot or too cold,the batter may contract....so keep the pan on medium flame always...

SO SWEET JAGGERY-GUD KE CHURMA LADOO

Let's begin a new post of this year with some special.As we all know winter is the best season to  binge on seasonal delicacies that are not only finger licking good ,but are also packed with multiple benefits that help us to stay warm and strengthens our immunity.

Jaggery commonly known as "GUD' in hindi is a completely unrefined sugar made from sugar cane juice that is reduced (cooked down) and set into blocks.It has a wonderful ,rich flavor,somewhere between molasses and caramel depending on the quality and season.

INGREDIENTS:
1 cup coarse wheat flour
1 cup bajra flour
1and 1/2 cup grated jaggery
1/2 teaspoon green cardamom seeds crushed
8-10 almonds chopped
1/2 cup clarified butter  (GHEE)
1/4 cup cashews chopped
1 cup milk

METHOD :
 Mix both the flours.Add 1/4 cup ghee,Knead into a stiff dough with the help of milk.Keep covered for 10-15 minutes..Now roll thick paranthas out of dough.Note; Roast paranthas on low flame so that they can get crisp from inside.When cooled crush these parantas into small bits,add grated jaggery,chopped nuts,cardamom powder and rest of the ghee.Make small ball of this mixture.....and churma ladoos are ready to serve.You can store these
ladoos in air tight container.
